OUR WINES
HARVEST AND VINIFICATION
At the end of august, when the sugar level and acidity reach the desired values, the harvest of white grapes for the production of our Metodo Classico begins. Then, at the end of september, the Primitivo grapes are harvested. After a manual harvest and the selection, grapes are put in boxes and then brought, in the shortest time, to the winery, where grapes are fed into the mechanical destemmer. From here, a mass composed of raisins and must is transferred to fermentation vessels. On the contrary, when working with white grapes, skins and stems are separated immediately.
After that, a temperature controlled fermentation starts, during which must and grapes are pumped over twice or three times a day, so that the cap of grape skins is always well submerged. At the end of the fermentation, which can last from ten to fifteen days for Primitivo, the paste composed of berries and must is racked off. Finally, the mixture of skins and must is pumped to a hydraulic press, where it is softly pressed, using an air chamber. After the pressing, the must is moved into stainless steel fermentation vessels, where the aging process will be completed before bottling.
