Altitude and sun exposure: 400 MASL, south-east
Soil: medium-textured soil.
Training system,plant density and yield: pruned-spur cordon-trained, 4.500 plants per hectare, 100 q per hectare
Ageing: Champagne method, minimum 36 months on lees
Alcohol (%vol): 12%
Sensory evaluation: it is a bright and luminous wine, straw yellow colour with golden tinges, and numerous and persistent bubbles, giving it a fine perlage. Intense and complex aroma, with fragrant and fruity scents of fresh citrus fruit, reminding of orange blossom flowers and mineral notes.
Food pairing: serve at 6-8°C. Excellent with ish appetizers, or as an opening wine to accompany delicate seafood pasta or fine risotto.
