Production zone: Cassano delle Murge (Ba), Alta Murgia National Park.
Altitude and sun exposure: 400 MASL, south-east
Soil: Medium rocky soil
Training system,plant density and yield: Pruned-spur cordon-trained, 4.500 plants per hectare, 60 q per hectare
Ageing: 12 months in twice used american oak small barrels, 6 months in bottle.
Alcohol (%vol): 16%
Sensory evaluation: deep ruby red colour with purple hues, clear and consistent in the glass. Sumptuous aroma, recalling cherries, mulberries, carobs and fine spices, enriched by balsamic notes and cinchona coming from the aging in fine wood barrels.
Food pairing: serve at 16-18°C to accompany braised meat, wild game meat, meat sauces and aged cheeses.
