Training system,plant density and yield: pruned-spur cordon-trained, 4.500 plants per hectare, 40 q per hectare
Ageing: 24 months in twice used american oak barrels, 6 months in bottle
Alcohol (%vol): 17%
Sensory evaluation: deep ruby red colour, important aroma with balsamic notes enveloping myrtles, licorice, black cherries and sweet spices. In the mouth it is rich, velvety, with a good and moderate tannic structure. Full and persistent palate with a complex and mineral finish.
Food pairing: serve at 16-18°C; this wine pairs well with important traditional dishes, stuffed pasta seasoned with fine tomato sauces, stewed and roasted meat, and it can enhance a ‘’marriage’’ between home-baked bread in a wood oven and grilled local cheese.
